  • 1 cup cottage cheese 2% or full-fat recommended
  • 2 large eggs
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • Pinch of salt
  • Pinch of black pepper

Instructions
 

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a blender, combine the cottage cheese, eggs, dried oregano, garlic powder, salt, and pepper. Blend until the mixture is completely smooth with no lumps.
  • Pour the batter onto the center of the prepared baking sheet. Use a spatula to spread it into a thin, even rectangle, approximately 8x10 inches.
  • Bake for 25-35 minutes, or until the flatbread is golden brown, firm to the touch, and the center is fully set.
  • Remove from the oven and let it cool on the baking sheet for at least 5-10 minutes before handling. This allows it to set and prevents tearing.
