Ingredients
  

2 cups all-purpose flour

1 ¼ cups granulated sugar

2 cups kefir (or buttermilk)

1 medium egg

3 tablespoons Dutch cocoa powder (unsweetened)

1 teaspoon baking soda

½ cup sunflower or canola oil

1 cup chocolate chips (dark or semi-sweet)

⅓ cup heavy cream

3 tablespoons shredded coconut (unsweetened)

½ tablespoon solid fat (to grease the baking pan)

1 ½ tablespoons flour or breadcrumbs (to dust the baking pan)

Instructions
 

Preheat oven to 340°F (170°C). Grease and dust the baking pan.

    Mix kefir, oil, egg, and sugar in a bowl until smooth.

      In another bowl, combine flour, cocoa powder, and baking soda.

        Gradually add dry ingredients to wet ingredients, mixing until smooth.

          Pour batter into the pan and bake for 20 minutes or until a skewer comes out clean.

            Prepare the chocolate glaze by melting chocolate chips with heavy cream.

              Once the cake cools, pour the glaze over it and sprinkle with coconut.

                Notes

                For added flavor, brush the top of the cake with jam before glazing. Use fresh ingredients for the best results!
