Ingredients
  

2 pounds of chicken thighs or breasts (boneless and skinless)

3 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

2 tablespoons Aji Amarillo paste

1 cup chicken stock

½ cup heavy cream

¼ cup grated Parmesan cheese

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

Fresh cilantro, chopped, for garnish

Instructions
 

Season the chicken with salt, pepper, cumin, and paprika.

    Heat olive oil in a skillet and sear the chicken until golden brown.

      Sauté onions and garlic in the same skillet.

        Stir in Aji Amarillo paste, then add chicken stock.

          Mix in heavy cream and Parmesan cheese to create a smooth sauce.

            Return chicken to the skillet and simmer until fully cooked.

              Garnish with cilantro and serve hot.
