Ingredients
  

2 tablespoons olive oil

1 medium white onion, diced

1 pound boneless skinless chicken breasts, diced

1 (4-ounce) can mild diced green chiles

6 (8-inch) flour tortillas (regular or gluten-free)

1 (15-ounce) can mild red enchilada sauce

½ cup refried beans

2 cups shredded Mexican cheese blend

2 tablespoons cilantro, chopped (optional for garnish)

Instructions
 

Preheat the oven to 350°F (175°C).

    Sauté onions in olive oil until translucent, then add chicken and green chiles, cooking until chicken is done.

      Stir in refried beans and enchilada sauce, then assemble the enchiladas in a baking dish with sauce and cheese on top.

        Bake for 20 minutes until cheese is melted and edges are slightly crispy.

          Garnish with cilantro and serve.

            Notes

            Can be made ahead of time and stored in the refrigerator for up to 2 days. Optional to add toppings like sour cream or guacamole.
