Ingredients
  

2 pounds Potatoes (Russet or Yukon Gold)

1 medium Onion (finely chopped)

1 cup Carrots (diced)

1 cup Celery (diced)

2 cloves Garlic (minced)

3 tablespoons Butter

4 cups Vegetable or Chicken Stock

1 cup Heavy Cream

Instructions
 

Sauté onions, garlic, carrots, and celery in butter until softened.

    Add diced potatoes and stock; bring to a boil, then simmer until tender.

      Blend the soup until smooth, then return to pot.

        Stir in heavy cream and simmer for an additional 5 minutes.

          Serve warm, garnished as desired.
